Cod in pil pil sauce

- Prepare the Cod:
- If using salted cod, desalinate it by soaking it in cold water for 24-48 hours, changing the water every 8 hours.
2. Cook the Garlic and Chili:
- Slice 6 garlic cloves and cut 2 dried chili peppers into rings.
- Heat 250 ml of olive oil in a pan over medium heat.
- Fry the garlic and chilies until golden. Remove and set aside.
3. Cook the Cod:
- Lower the heat to a minimum and place the cod fillets skin side up in the oil.
- Cook gently until the cod releases its gelatin, about 10-15 minutes. Remove the cod and set aside.
4. Emulsify the Sauce:
- Let the oil and gelatin cool slightly. Stir gently in circular motions to emulsify the sauce.
5. Assemble the Dish:
- Return the cod to the pan and pour the emulsified sauce over it.
- Add the reserved garlic and chilies.
- Heat on low for a few minutes.
6. Serve:
- Serve hot, with some bread to enjoy the sauce.
