Ingredients

4 loins of desalted cod

4 cloves of garlic

1-2 chilli peppers (optional)

200 ml extra virgin olive oil

Fresh parsley (for garnish)

Istructions

Instructions:

  1. Prepare the Cod:
  • If using salted cod, desalinate it by soaking it in cold water for 24-48 hours, changing the water every 8 hours.

2. Cook the Garlic and Chili:

    • Slice 6 garlic cloves and cut 2 dried chili peppers into rings.
    • Heat 250 ml of olive oil in a pan over medium heat.
    • Fry the garlic and chilies until golden. Remove and set aside.

    3. Cook the Cod:

      • Lower the heat to a minimum and place the cod fillets skin side up in the oil.
      • Cook gently until the cod releases its gelatin, about 10-15 minutes. Remove the cod and set aside.

      4. Emulsify the Sauce:

        • Let the oil and gelatin cool slightly. Stir gently in circular motions to emulsify the sauce.

        5. Assemble the Dish:

          • Return the cod to the pan and pour the emulsified sauce over it.
          • Add the reserved garlic and chilies.
          • Heat on low for a few minutes.

          6. Serve:

            • Serve hot, with some bread to enjoy the sauce.
