
Beans with “chorizo” sausage

- Preparation of the beans:
- Soak the beans in cold water for at least 8 hours or overnight. Drain and rinse them before cooking.
- Cooking the beans: In a large saucepan, place the beans in a large pot.
- In a large pot, place the soaked beans and cover with fresh water. Bring to a boil, then reduce heat to medium-low. Simmer until beans are tender, this may take about 1 to 1.5 hours depending on the type of beans.
- Preparing the sofrito: Preparation of the sofrito
- While the beans are cooking, in a large frying pan, heat a little olive oil over medium heat. Add the chopped onion, garlic, green pepper and carrot. Cook until tender and lightly browned.
- Add the chopped tomatoes to the pan and cook until they break down and form a thick sauce.
- Add the bay leaf and paprika to the sauce and mix well.
- Preparation of the chorizo
- Meanwhile, in another frying pan, cook the sliced fresh chorizo until golden brown on the outside and cooked on the inside.
- Final combination: Once the beans are tender, add the sofrito vegetables and tomato to the pot with the cooked beans.
- Once the beans are tender, add the sofrito of vegetables and tomato to the pot with the cooked beans. Mix well and allow everything to heat together for a few minutes to allow the flavours to blend.
- Add the cooked chorizo to the pot and mix gently to incorporate with the beans and sofrito.
- Taste and adjust seasoning with salt if necessary.
